Sheet Pan Greek Chicken with Potatoes and Feta

Ingredients
- Chicken thighs
- Golden potatoes, sliced
- 1 tablespoon olive oil
- 2 tablespoons balsamic vinegar
- Juice from 1 lemon
- Mediterranean seasoning
- Salt & pepper
- Feta, crumbled
- Fresh parsley (optional)
Directions

Preheat the oven to 425° F and line a baking sheet with a silicone mat or parchment paper

In a large bowl, toss the potatoes and chicken thighs with olive oil, balsamic vinegar, and lemon juice, and then season with salt, pepper, and Mediterranean seasoning

Lay the potatoes out evenly across the baking sheet and then place the chicken thighs on top

Bake for 30 to 40 minutes or until the potatoes are fork-tender and the chicken is cooked through

With 5 minutes left, add the crumbled feta on top so it melts a bit

Top with fresh chopped parsley and serve with peas or other veggies of choice (not shown)
