Roasted Green Beans with Sun-dried Tomatoes

Looking for a festive side dish for your next holiday party? Check out this super simple green bean recipe that will wow your guests! It's so easy to throw together and pop in the oven! I serve this at my annual Christmas parties and also keep it in my weekly recipe rotation due to the ease and simplicity of the recipe. It's a crowd pleaser for sure!

Makes 4 Servings
Ingredients
- 1 pound green beans, cleaned and trimmed
- 1 tablespoon oil from sun-dried tomato jar or olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon sea salt
- 1/4 teaspoon ground black pepper
- 2 tablespoons sun-dried tomatoes, chopped
- 1 ounce goat cheese, crumbled
- 1/8 cup pine nuts
Instructions

Preheat oven to 400°F and line a baking sheet with parchment paper or a silicone mat.

In a large bowl, toss together green beans, oil, garlic powder, salt, and pepper.

Lay green beans onto prepared baking sheet in an even layer.

Sprinkle sun-dried tomatoes, goat cheese, and pine nuts evenly over green beans.

Bake for 20 to 25 minutes or until green beans are cooked through but still have a slight crunch to them.
