Keto White Chocolate Matcha Fudge

This festive fudge is perfect for a Christmas or St. Patrick's Day holiday party. Feel free to mix it up and add other flavorings such as peppermint extract and other add-ins like cacao nibs for an extra crunch.

Instructions

  1. Grease an 8-inch square pan with butter or oil and then line it with a piece of parchment paper, pressing down so that it sticks and evenly covers the pan.
  2. In a medium saucepan, melt together the coconut milk, cacao butter, and coconut butter over low heat, stirring occasionally, until smooth. Remove from heat and whisk in the collagen powder, matcha powder, vanilla extract, salt, and cinnamon. Taste the mixture and then add sweetener if desired, adjusting the sweetness to your liking.
  3. Pour the mixture into the prepared pan and spread evenly. Refrigerate for at least 2 hours, preferably overnight.
  4. Cut into 16 squares and store in an airtight container in the refrigerator for up to 2 weeks. Enjoy!

Notes

Ingredient Tip: The matcha powder gives this fudge it's green color and a hint of "earthy" flavor. If you're not a fan of matcha, you can always leave it out and you'll still have a delicious white chocolate fudge.
